Ingredients

  • 2 orange roughy fillet (6 oz)
  • salt & pepper
  • oreganata breadcrumbs
  • 1 fz Beurre Blanc sauce
  • garnish: parsley, fresh oregano sprigs

 

Oreganata Mixture recipe: 

  • 3/4 cup plain breadcrumbs
  • 1/2 cup grated parmigiano cheese
  • 1 tablespoon fresh oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon fresh thyme
  • 1/4 cup olive oil
  • 1 oz chopped garlic

Combine all ingredients into a wet sand-like consistency

Directions

  • Season fish with salt & pepper mix
  • Pan sear orange roughy until 90 percent done
  • Top with oreganata
  • Continue baking until crumbs are golden-brown
