- 2 orange roughy fillet (6 oz)
- salt & pepper
- oreganata breadcrumbs
- 1 fz Beurre Blanc sauce
- garnish: parsley, fresh oregano sprigs
Oreganata Mixture recipe:
- 3/4 cup plain breadcrumbs
- 1/2 cup grated parmigiano cheese
- 1 tablespoon fresh oregano
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon fresh thyme
- 1/4 cup olive oil
- 1 oz chopped garlic
Combine all ingredients into a wet sand-like consistency
Directions
- Season fish with salt & pepper mix
- Pan sear orange roughy until 90 percent done
- Top with oreganata
- Continue baking until crumbs are golden-brown
