Cilantro Baked Fish with Stewed Tomatoes and Onions

Ingredients

 

Cilantro Baked Fish with Stewed Tomatoes and Onions
 
Ingredients


4 oz. mild white fish (tilapia, cod, orange roughy)
¼ teaspoon garlic powder
1/8 teaspoon cumin
1/8 teaspoon chili powder
Cooking Spray
1 garden fresh tomato, diced
¼ cup onion, diced
1 teaspoon dried cilantro


1/8 teaspoon ground sea salt

Directions

 

1) Cover both sides of fish with garlic powder, cumin and chili powder. Cook in small skillet sprayed with cooking spray 2-3 minutes on both sides. 
2) While fish is cooking, spray medium sized skillet with cooking spray and cook tomato, onion and cilantro over medium heat for 3 minutes.
3) Top fish with tomato and onion mixture and ground sea salt
 
Serves 1
