Pumpkin Apple Muffins

½ cup whole wheat flour
¾ cup all purpose flour
½ cup sugar
½ cup Splenda®
1 tsp cinnamon
½ tsp baking soda
¼ tsp salt
¼ cup egg substitute
½ cup canned pumpkin
¼ cup canola oil
1 cup chopped Golden Delicious apples




1. Preheat oven to 350º F. Line muffin tins with paper muffin cups or spray muffin tin with cooking spray.
2. In a large bowl, combine flour, sugar, Splenda®, cinnamon, baking soda, and salt.
3. In a small bowl mix egg substitute, pumpkin and oil
4. Add liquid ingredients to dry until just combined. Do not over mix.
5. Stir in apples.
6. Fill each muffin cup ¾ full and bake for 20-25 minutes or until toothpick inserted into center of muffin comes out clean
Makes 12 muffins
