July 10: Tropical Sundaes with Kiwi Sauce

For the sauce:
2 kiwi (peeled and cut into pieces)
2 tablespoons honey
1 teaspoon lemon juice

For the sundae:
3 cups cubed fresh or canned tropical fruit (pineapple, mango, banana, kiwi, etc.)
1 1/2 pints vanilla ice cream
1/4 cup coarsely chopped, toasted macadamia nuts or almonds



For the sauce:

Place kiwi, honey and lemon juice in a blender or food processor. Cover and pulse until smooth. Makes 2/3 cups.


For the sundae:

Spoon fruit into 4 sundae dishes. Place large scoop of ice cream in each. Spoon kiwi sauce over ice cream. Sprinkle with macadamia nuts and serve. Makes 4 servings.
