Johnny's Roasted Bell Pepper Stuffed with Sea Scallops & Pesto

Ingredients

1-2 roasted red peppers cut lengthwise through stalks, take out seeds and core

2 large garlic cloves cut into thin slivers

4 shallots or 1 medium red onion

3 Tbsp pesto

salt & pepper to taste

fresh basil and mesclun

4 Tbsp olive oil

sea scallops

Directions

*roast peppers in oven for 30-45 minutes

*sear one side of scallops in skillet 

*place scallops inside peppers, top with pesto and place back in oven for 10 min.

*garnish and place atop mesclun
