Berry Tarts


For the Dough:

  • 2 1/3 cup of all purpose flour
  • 1/4 cup sugar, plus additional for sprinkling
  • 1 large egg, lightly beaten
  • Salt
  • 7 T whole milk, room temperature
  • 5 T unsalted butter, softened and cut into pieces
  • 1 1/2 cup of heavy cream
  • 1 T vanilla bean paste
  • 2-3 T sugar
  • Fresh berries


To make the pastry dough, place the flour in a large mixing bowl. Make a well in the center and add 1/4 cup sugar, the egg, salt, milk and softened butter. Blend the ingredients in the well with a fork. Gradually incorporate the flour to make a soft ball of dough. Knead the dough gently for 1 minute, or until it is smooth and very tender. Wrap the dough and let it rest at room temperature for at least 30 minutes. Roll out and press into a 9X11 inch tart pan with removable bottom. Blind back for 20 minutes at 350 degrees F, and let cool completely.  Whip heavy cream with vanilla and sugar. Spread vanilla cream over the bottom and top with fresh berries. Serve immediately.
