Jumbo Lump Crab Cake
Cooking Procedure: Flattop/Oven
Cook Time: 6-8 minutes
Finished Condition: Golden Brown Cake; internal > 150 F
Garnish: Lemon Wedge/Chopped Parsley
Lump Crab Cake – 5 wz
Panko Bread Crumbs – 2 Tbsp
Remoulade Sauce – 1 tbs
Bruschetta Tomatoes – 2 wz
Lemon Wedges – 1/8 lemon
1. Weigh and pattie cakes 5 wz hockey puck shaped. Rub lightly with 1 tbs Remoulade and roll in panko crumbs.
2. Brown both sides of cake on flattop at 350-375 F in clarified butter.
3. To order: heat for 15 seconds in microwave, then fire in 450-500 F oven 6-8 minutes or until internal temperature reads 150 F + on instant red thermometer.
