Mediterranean Salad

Cooking Procedure: Cold Preparation
Cook Time: 3 minutes
Finished Condition: Crisp, cold ingredients; cold plate

Ingredients:

Romaine Lettuce, Caesar cut – 2 wz
Heart n Heart Mix – 2 wz
Cherry Tomatoes, halved – 12 halves
Artichoke Hearts – 8 ea
Red Pepper, julienne – 1 wz
Yellow Pepper, julienne – 1 wz
Red Onion, julienne – 1 wz
Kalamata Olives – 1 wz
Feta, crumbled – ½ wz
Pepperoncini, sliced into rings – 3 ea
Red Wine Vinaigrette – 2 fz

Procedure:

1. Toss lettuces, tomatoes, artichoke hearts, peppers, red onion, olives and pepperoncini together with dressing to order.
2. Garnish top of salad with crumbled feta cheese.
