Cooking Procedure: Flattop 350-400 F
Cook Time: 6-8 minutes
Finished Condition: Meat internal temperature>145 F
Garnish: Chopped Parsley

Ingredients:

Breaded Veal Slices -- 2 ea
Clarified butter blend -- 1 fz
Marinara Sauce (veal) – 3 fz
Mozzarella, shredded – 2 wz
Marinara Sauce – 2 fz

Procedure:

1. Brown veal on flat top with clarified butter.
2. Top each veal slice with 1.5 fz marinara sauce and 1 oz shredded mozzarella cheese.
3. Melt under salamander until cheese is lightly browned and bubbly.
4. Present as shown in photo.
