Johnny's Marinated Pork Medallions with Butternut Squash Risotto

It's a dish that might make you hungry. It's full of the flavors of fall.

The chef from Johnny's Italian Steakhouse is preparing a mouth-watering marinated pork medallion with butternut squash risotto.

Let two pork medallions marinate overnight. Then over medium-high heat, sear pork in skillet with olive oil. Toss risotto in oven for a bit, then put it in another skillet (separate from pork) and combine it with saffron, a little wine, chicken stock and chopped butternut squash. Delish!
