Chef Jeff from Johnny's Italian Steakhouse says this is a delicious recipe that won't add inches to your waistline.
First, sear tuna over a high heat so the outside is seared and the inside is rare. Then, set the cooked tuna aside.
Next, use fresh whole pineapple (sliced and marinated in spiced rum and a pinch of cinnamon). Grill the pineapple piece until you get char marks in a diamond pattern.
Pour the remainder of the pineapple marinade and half cup of teriyaki into a skillet. Bring that to a boil and let it reduce by half.
Finally, shingle the pineapple piece over the tuna and drizzle sauce over the meat.
Use a fresh spring mix of greens to garnish...and for even bigger flaor couple your tuna with fresh salsa, including chopped onions and tomatoes.
