You Gotta Eat: C&R's BBQ

GALESBURG, Ill. -- At C & R's barbecue the slogan is low and slow.

This business of almost three years has been slowly but surely making its way on the scene in Galesburg.

"Taste pretty good I think anyway," said co-owner Cornelius Stanley.
"A lot of people have said that."

Cornelius Stanley is the C in C & R's.

Along with his partner, chef Rhett Hulst, they make up the namesake.

Stanley said when it comes to barbecue, it's all about the dry rub, long hours in the smoker, and his choice of three homemade sauces.

"The ladies like the sweet," said Stanley. "The tangy is like right in the middle but nothing too hot, and the spicy of course has a kick."

On the menu at C and R's, you'll find sandwiches like tenderloins and chicken, specials including pork tacos, and of course smoked options like ribs, brisket, pulled pork.

I invited Cornelius to join me for a meal and by his recommendation I went with the two meat combo.

Pulled pork is his most popular option. So I added brisket to that with a side of fries, potato salad, and Texas toast, and I was ready to eat.

Cornelius went with a pulled pork sandwich.

As we conversed over the finer things in life, like a meal of good barbecue...I worked on scarfing down mine

I made sure to try all three sauces, unable to determine a winner.

My total came to $12.71 plus tip.

C & R's Barbecue is located off North Cherry Street in Galesburg.

They are open from Wednesday to Saturday from 11am to 10pm and Sunday from Noon to 10.
