PEORIA, Ill. -- This week on You Gotta Eat we stay in town for some Chicago style barbecue.
News 25's Chad Weber heads to TT's Barbecue in Peoria and brings along a fellow Peoria aficionado.
TT's Barbecue has been sitting off Western Avenue for two years now but it has taken three generations and decades of practice to perfect this family recipe.
"It came from my grandfather Booker Ross down to my father Orlando Randall. He gave me the recipe and we combined our heads together and came up with TT's barbecue,” said Co-owner Maurice Cobige.
TT's specializes in Chicago style barbecue.
Along with using charcoal and wood in the smoker, the key factor to this style is the mild sauce.
"Oh it's good. It's real good. I've never tasted no sauce like it,” said one customer.
Upon arrival, the first thing you'll notice is that you order behind glass, It's a safety measure.
"Meanwhile back in Peoria" blogger Marty Wombacher joined me this time.
Wombacher has tried more than a few restaurants in his day so I was curious to see what he thought of TT's.
I went with the ribs tips and Marty ordered the jerk chicken. Both are best sellers on the menu and both come with mild sauce.
The restaurant is usually carry-out only but we were special enough to get our own table.
Marty dipped his chicken in the mild sauce and, based on his reaction, I think he was pleased.
I gave my rib tips a good dosing of the sauce as well. They also came with fries underneath.
My rib tips came to $8.27.
We both cleared our dishes and Marty ended our meal with some strong words about Peoria barbecue.
"Probably the best chicken and barbecue sauce I've ever had,” he said. “You guys beat Big Johns."
TT's barbecue is opens at 10:30 a.m. Tuesday through Sunday. They close at 10 p.m. Tuesday through Thursday. They are open until midnight Friday and Saturday and close at 8 p.m. on Sunday.
