Good Company 2-25-13 Biaggi's Shrimp Salad

And Biaggi's is working on something special... a Low-Cal menu! Mark and Gretchen help cook up a delicious salad that includes some Shrimp and Avocado!

Biaggi’s Lower Calorie Grilled Shrimp Salad

12 large shrimp, peeled and deveined minutes/side
2 Tbs olive oil
½ cup apple cider vinegar
2 Tbs Dijon mustard
¼ tsp garlic
6-8 oz mixed field greens
¼ cup corn kernals
2 Tbs red onions, diced
1 Tbs capers
6-8 cherry tomatoes
½ avocado, diced
Salt & pepper to taste

Mustard Vinaigrette
Using a small mixing bowl whisk together the apple cider vinegar, Dijon mustard, garlic and 1 Tablespoon of the olive oil until well blended.

Grilled Shrimp
Heat grill or grilling pan over medium-high heat. Lightly drizzle 1 Tablespoon of olive oil over all of the shrimp. Place shrimp onto the grill or grill pan and cook for approximately 2 minutes on each side.

Salad Preparation
In large mixing bowl, lightly drizzle the dressing over the mixed field greens until coated and gently toss. Add corn, red onions, capers and cherry tomatoes and gently toss. Place on large serving platter. Place grilled shrimp over the top of the salad and drizzle with just a bit more dressing. Place avocado pieces over the top of the salad and shrimp. Lightly season with salt and pepper and serve immediately.
