Publik House's Smoked Tomato Bisque Recipe:
Ingredients for Smoked Tomato Bisque:
2.5 # tomatoes
.5 med yellow onion, diced
1 ribs celery
2 cloves garlic, chopped
1 chunks parmesan 1” each
.5 c basmati rice
3.5 c veg stock
Smoke the tomatoes with apple wood for 20 min. Sweat the other veg until translucent. Add rice and cook for 2 min. Add tomatoes and veg stock. Simmer for 20 min. Puree in the blender and pass through fine mesh strainer.
1 pint cherry tomatoes, roasted at 250˚ for 2 hours
.5 c fresh mozzarella, shredded
.25 c basil, chopped
1 T extra virgin olive oil
1 T lemon juice
Toss all ingredients together and season with salt & pepper.
