Cheesy Crackers
This recipe makes about 3 dozen

Ingredients
1/2 cup butter
1/2 pound extra sharp cheddar cheese, grated (the better the quality, the better the cracker)
1 cup all purpose flour
½ cup ground ­­­­flax meal
1/2 teaspoon salt

Directions
Preheat oven to 350 degrees. In the meantime, cream together butter and cheese.

Mix flour and flax and salt. Then add flour mixture into cheese and butter mixture. Mix well.

Roll dough into 1 inch balls and place on ungreased cookie sheet. Flatten with fork in a crisscross fashion. Bake for 12-15 minutes. Allow to cool before removing from the pan.

Granola bites

Ingredients
1 cup flaked coconut, lightly toastedAsk a question about this ingredient
1 cup granola of your choice
½ cup chopped walnuts
½ cup dried cranberries
1/2 cup chocolate chips, preferably mini
1 cup crunchy or smooth peanut butter
3-4 tablespoons honey

Directions
Spread the coconut out on a large plate or rimmed baking sheet. In a large bowl, combine the rest of the ingredients. Mix well. Using 2 spoons, a small cookie scoop, shape about 2 tablespoons' worth of the mixture into small balls. Set them on the bed of coconut. When all the balls are made, roll them in the coconut to coat completely. Chill for 1 hour, if you can wait that long.

Roasted Lima Bean Snackers
This recipe serves 2-6 snackers

Ingredients
2 cups frozen lima beans
6 cloves of garlic, quartered
1 cup chopped green olives
2-3 tablespoons olive oil
2 teaspoons dried thyme
course sea salt to taste

Directions

Preheat oven to 350. Toss all ingredients together and roast on baking sheet for 11/2 to 2 hours.
