Scrumptious Biaggi’s Chocolate Raspberry Tirami Su

Biaggi’s Chocolate Raspberry Tirami Su

16 oz. mascarpone cheese
2 cups heavy cream
½ cup powdered sugar
¼ cup cocoa powder
¼ vanilla bean
1/3 cup chocolate liqueur
1 oz grated white chocolate
1 oz grated dark chocolate
2 – 3 oz packs lady fingers
1 cup espresso
¼ cup Chambord (or other raspberry liqueur)
6 oz. fresh raspberries

In a medium mixing bowl beat together mascarpone cheese, heavy cream, powdered sugar and cocoa powder until well blended. Gently fold in the vanilla bean. Refrigerate for 15 minutes. While cream sets, in a medium bowl stir together espresso and raspberry liqueur. Dip lady fingers in espresso mixture and place half of them on the bottom of an 8” x 8” baking pan. Layer half of the cream mixture over the lady fingers and sprinkle with ½ of each of the grated chocolates. Place the remaining espresso dipped lady fingers over the grated chocolates and layer with remaining cream mixture and grated chocolates. Cover and refrigerate for 6 hours. Cut into squares and garnish with fresh raspberries.
