Fabulous Fresh and Fancy Seafood

Biaggi’s Shrimp & Scallop Spiedino

6 bamboo skewers
18 large shrimp
18 sea scallops
15 1” wide pieces of red onion
¼ cup red onion, chopped
¼ cup red peppers, chopped
½ cup zucchini, chopped
12 cherry tomatoes
¾ cup herb garlic oil
2 Tbl balsamic glaze
¼ cup pesto
1 pkg. store bought couscous
Salt & pepper to taste

Couscous:
Prepare couscous per directions on box. In a large pan sauté ¼ cup herb garlic oil, chopped red onions, red peppers and zucchini. Mix vegetables with couscous and set aside on a large serving platter.

Shrimp Skewers (3): 6 shrimp, 5 onion pieces per skewer (1 onion piece between each shrimp)
Scallop Skewers (3): 6 scallops, 4 cherry tomatoes per skewer (1 cherry tomato between 2 scallops)

Preheat large grill pan or on griddle top. Drizzle remaining herb garlic oil over each prepared skewer; sprinkle with salt and pepper. Cook skewers for 2-3 minutes on each side to get a golden brown on the seafood. Place skewers over the bed of couscous; garnish by drizzling pesto and balsamic over the platter.
