Pumpkin Sweet Potato Fries
2 very large sweet potatoes
1/4 cup coconut oil, melted
3/4 teaspoon salt
1/4 teaspoon onion powder
1/8 teaspoon cinnamon
1/8 teaspoon cayenne
To begin, you’ll need two fat, round sweet potatoes. Look for the biggest ones with the most even girth. Peel the skin from both sweet potatoes. Slice the tip ends from the sweet potato, leaving the thickest part of the middle. Use a sharp knife to cut a small “V” shape in the center of the sweet potato. Slice the sweet potato into 1/8″ thin slices. Use a small, sharp knife to “carve” jack-o-lantern faces into each sweet potato slice. coconut oil and spices in plastic bag. Place the sweet potato fries on a cookie sheet and bake in an oven preheated to 400 degrees for 20-22 minutes, or until barely golden brown around the edges. Serve and Enjoy!
Spider Crackers
Ingredients (per ‘spider’)
2 round crackers
peanut or any nut butter
8 chow mein noodles
2 raisins
Smear a small amount of peanut butter onto the inside of one cracker. Place 4 chow mein noodles on one side of the cracker followed by 4 more on the other side. Place the remaining cracker on top. To make the ‘eyes’: dab two spots of peanut butter near the top of one crackers to ‘glue’ the raisins into place.
Pizza Mummies
Ingredients
English muffins
Pizza sauce
Skim milk mozzarella cheese
Black Olives
Directions
Split the English muffin in half. Spread a spoonful of pizza sauce over each muffin half. Sprinkle cheese over muffin leaving an open space near the top to place two olives as eyes.
Place finished mummy on a baking sheet and bake at 350 degrees for 10 minutes or until cheese is melted and muffin is toasty.
