If you have holiday leftovers - Dietitian Susan Waltrip from Peoria's Hy-Vee has a couple of great ideas to make a brand-new (and healthy) meal!
Tangy Cranberry Relish
Serves 6
All you need:
1 pound (about 2) unpeeled red apples, cored
1 (12 oz.) bag fresh cranberries
1 navel orange, peeled and segmented
1/3 cup chopped walnuts
2 tablespoons brown sugar
3 tablespoons light Agave Nectar
Red food coloring, as desired
All you do:
Place apples, cranberries and orange
in food processor or grinder. Cover and
process until finely chopped.
Stir in walnuts. Add brown sugar and Agave until sweetened to your taste. Add a few drops
of red coloring as desired to enhance
presentation.
Healthy Thanksgiving Wrap
Serves 1
All you need:
1 high-fiber wrap or tortilla, such as Flat Out wraps
1 wedge Laughing Cow cheese, light Swiss flavor
2 ounces reduced-sodium deli turkey breast
2-3 tablespoons light cranberry relish
Spinach leaves
All you do:
Spread Laughing Cow cheese on center of wrap.
Layer spinach leaves, turkey breast and cranberry relish over cheese. Roll tightly, and enjoy!
