Tired of the same old cheese and crackers? Chef Troy has a great quesadilla recipe in our Good Company kitchen!
Lobster & Brie Quesadilla
4 Tbl melted butter
8 12-inch flour tortillas
6 oz Brie Cheese (Creamed or Wheel sliced)
1 lb. lobster or crab meat
2 oz sautéed wild mushrooms
Salt & Pepper to taste
2 Tbl cilantro
Garnish: Sour Cream, Onion, Avocado, Diced tomatoes
Brush the outside of the tortilla with butter. Place butter side down on a preheated cooking surface, layer ½ of the shell with brie, lobster, mushrooms and salt & pepper to taste. Fold over other half, cook until golden brown on both sides and cheese is melted. Place in warm oven. Repeat with the other tortillas. Cut in wedges to serve with quesadilla condiments.
