The holidays are a great time to spend time with family and reconnect with your kids. And, one great way to do that is to cook with them! Peoria Hy-Vee's Dietitian Susan Waltrip has some fun - and healthy - treat ideas.
Rice Crispy Reindeer
Ingredients
2 Tbsp Smart Balance butter
1 Tbsp unsweetened baking cocoa
1 (10.5 ounce) package miniature marshmallows
1 ½ cups Hy-Vee raw almonds
4 cups gluten-free brown rice cereal (ENVIRO KIDZ Koala Crisp)
Nonstick cooking spray
Decorations
White decorator icing
Small gluten-free pretzel twists
Dark Chocolate candy coated M&M’s
Lollipop or craft sticks, if desired
Directions
Place butter and chocolate in 6-quart saucepan; cook over low heat until melted (3 to 4 minutes). Add marshmallows; continue cooking, stirring occasionally, until melted and smooth (4 to 5 minutes). Remove from heat. Add cereal and almonds; stir until well-coated.
Coat a 9x13 pan with cooking spray and press mixture evenly into the prepared pan. Cool 15 minutes.
Remove mixture from pan; cut into triangles.
For each reindeer, use icing to secure 2 pretzel pieces on each side of triangle to form antlers, 2 chocolate pieces for eyes and 1 red one for nose. Insert lollipop stick into each reindeer, if desired. Makes 8 reindeer.
Holiday Cocoa
Ingredients
2 cups Hy-Vee Nonfat dry milk powder
½ cup Hy-Vee fat free powdered non dairy creamer
½ cup Hy-Vee unsweetened baking cocoa
8 packets (2 teaspoons) Stevia in the raw
3 candy canes crushed
Directions
Combine all ingredients except candy canes. Store ingredients in an airtight container for later use. To make a cup add 2 - 3 heaping teaspoons to 8 ounces of boiling water and sprinkle with crushed candy canes. Great as a gift! Just use a decorative clear bag or container, add cocoa mix and top with crushed candy canes. Tie bag with a ribbon!
