February is Heart Health Month! And what better way to celebrate than with our HyVee Dieititian. Susan Waltrip has some great chocolate recipes and the chance for you to show your Heart's Desire!
Chocolate Angel Food Cake
1 package Hy-Vee angel food cake mix
½ cup and 2 tablespoons of Hy-Vee cocoa powder
1 teaspoon cinnamon
1, 16 ounce container of Hy-Vee lite coolwhip
Fresh raspberries and chocolate shavings optional
Prepare cake according to package directions. Fold in ½ cup cocoa powder and cinnamon, pour into cake pan and bake.
Allow cake to cool. Slice cake horizontally twice leaving the cake in three layers. Spread raspberry preserves on first layer, add the next layer of cake and repeat. In a separate bowl mix 2 tablespoons of cocoa with cool whip and stir together. Ice cake with cool whip mixture. Top cake with raspberries and chocolate shavings!
Chocolate Dipped Apricots with Pistachios
1 package Hy-Vee dried apricots
¼ cup Hy-Vee dark chocolate chips
2 tablespoons Hy-Vee Pistachio Kernels, finely chopped
Line a baking sheet with wax paper. Melt chocolate in a double boiler. Dip apricots in chocolate using a slotted spoon or toothpicks. Place dipped apricot on wax paper and sprinkle with pistachios. Great recipe for a party! Try using different dried fruits and using a fondue pot so everyone can dip their own fruit.
