Carrot Cookies

Ingredients
1 bag Hy-Vee Sugar Cookie Mix
2 jars Hy-Vee Carrot Baby Food
1 packet milled flax seed + 3 tbsp water (egg replacer)
Orange Zest Icing (recipe below)
1 tube green frosting

Directions
Preheat oven to 375 degrees. Spray a 9x13 jelly roll pan with cooking spray. In a small bowl mix together water and flax seed, set aside. In a medium bowl combine Hy-Vee Sugar Cookie Mix with 2 jars baby food. Add flaxseed mixture. Stir well. Pour batter into prepared pan. Bake for 8-12 minutes. Cool. Cut into triangles. Add orange zest icing and green frosting to decorate the triangles as carrots.

Orange Zest Icing

Ingredients
3-4 tbsp orange juice
½ tsp orange zest
1 cup confectioner’s sugar

Directions
Grate the peel of the orange. In a sandwich bag combine powdered sugar and orange zest and juice of ½ the orange. Zip the bag and mix well. Squeeze icing to one side of the bag, on the opposite side cut the tip forming a small opening.. Squeeze frosting onto the carrot end of cooled cookies. Make the carrot top by zigzagging the green frosting.

Rabbit Food Salad

Ingredients
1 bag shredded carrots
2 6 ounce containers Light and Fit pear yogurt
½ cup golden raisins
1 apple, chopped
½ cup pecans
¼ cup unsalted sunflower seeds

Directions
In a medium bowl, combine carrots, raisins, apple pieces, pecans, and sunflower seeds. Mix well. Add 1-2 containers pear yogurt. Mix well. Serve chilled.
