Easy Summer Sides from Biaggi's

Summer BBQ's and picnics are in full swing. Short on time but hungry for a tasty recipe? Chef Troy from Biaggi's shares a recipe for Summer Potato Salad plus grilled fruit skewers!

Biaggi’s Easy Summer Potato Salad

3 lbs red potatoes, chopped to bite size
2 Tbl Dijon mustard
¼ cup olive oil
¼ cup mayonnaise
1 Tbl white vinegar
1 Tbl Italian parsley
½ tsp cayenne pepper
¼ Tbl salt & pepper
¼ cup red onion, finely diced
6 slices cooked bacon, diced
½ cup blue cheese
1 cup fresh, cut green beans

Place potatoes in large stock pot, cover with water and bring to a boil over high heat. Continue to cook over medium heat until potatoes are tender (approx. 5 minutes). Remove pot from sink and run cold water over potatoes until they are completely cooled. Drain cooled potatoes into a mixing bowl.

In a separate bowl whisk together Dijon mustard, olive oil, mayonnaise and white vinegar. Add parsley, cayenne pepper and salt and pepper and whisk until blended. Pour dressing over cooled potatoes and toss in mixing bowl with onion, bacon, blue cheese and green beans.
