Whether it's for your 4th of July party, your summer family reunion or just an afternoon hanging out with the kids - cool treats make for a great refresher from the heat! HyVee Registered Dietitian Susan Waltrip shares three great recipes: a 4th of July Trifle, Fruity Popsicles and a Waldorf Salad!
Fourth of July Trifle
Ingredients
1 pint blue berries
1 pound strawberries, sliced
1 angel food cake
1 package sugar free/fat free vanilla pudding
1 large container Hy-Vee lite cool whip
Directions
Cut angel food cake into 1 inch chunks. Whisk the package of dry pudding mix with cool whip. In a trifle bowl layer angel food cake, cool whip mixture and berries. Repeat 2-3 times and top with a dollop of cool whip mixture.
Waldorf Salad
Ingredients
2 large apples, cored, chopped
2 celery ribs, chopped
1 cup pitted sweet cherries
1 cup black seedless grapes, sliced in half
½ cup Hy-Vee slivered almonds
1 container Hy-Vee Lite vanilla yogurt
Directions
In a large salad bowl, combine all ingredients. Serve chilled.
Fruity Popsicles
Ingredients
Strawberries, quartered
Blueberries
Pear Nectar
Popsicle mold
Directions
Place cut strawberries and blueberries in popsicle mold and fill with pear nectar. Place cover on mold and freeze for at least 6 hours.
