Stay out of the hot kitchen and make these easy gourmet panini's from Biaggi's own Chef Troy Tomlinson!
Biaggi’s Caprese Panini
2 slices crusty or country-style bread
1 tsp pesto
4 slices buffalo mozzarella
2-4 slices heirloom tomatoes
1 Tbl garlic butter
Preheat electric panini maker or griddle.
Build the sandwich by first spreading the pesto evenly to cover the inside of both pieces of bread. Layer the mozzarella on one slice of the bread. Place the tomato slices over the mozzarella and close the sandwich with the other piece of bread. Evenly spread garlic butter on the outside of both sides of the sandwich, place on the Panini press and close. Cook for 4 minutes until golden brown, remove from the press and cut in half on an angle.
NOTE: If using a griddle, place a bacon press or frying pan over the sandwich to press it into the grill. Cook the 1st side for approximately 4 minutes or until golden brown, flip the sandwich and cook 2nd side for 4 minutes.
Biaggi’s Prosciutto Panini

3 Tbl feta cheese
4-6 slices prosciutto
2-4 slices heirloom tomatoes
¼ cup arugula
1 Tbl garlic butter
Preheat electric panini maker or griddle.
Build the sandwich by first spreading the feta evenly to cover the inside of both pieces of bread. Layer the prosciutto on one slice of the bread. Place the tomato slices and arugula over the prosciutto and close the sandwich with the other piece of bread. Evenly spread garlic butter on the outside of both sides of the sandwich, place on the Panini press and close. Cook for 4 minutes until golden brown, remove from the press and cut in half on an angle.
