Biaggi's: Chicken Marsala

Biaggi's Chicken Marsala

2 Chicken Breasts
1 Tbl cornstarch
1/2 Tbl salt & pepper
1 Tbl olive oil
1 Tbl unsalted butter
1/4 c. mushrooms, sliced
1/4 c. caramelized onions
1/4 c. marsala wine
2 Tbl Chicken Stock

Season the chicken breasts with salt and pepper on both sides, then dredge in cornstarch - shaking off any excess. Heat a large saute pan over high heat until just before it begins to smoke. Add the olive oil, then the chicken breast. Turn the flame to medium-hi and cook for 2 minutes. Turn the chicken over, add the butter and cook for an additional 2 minutes. Transfer chicken to a plate and cover with foil.

Place mushrooms, caramelized onions and a pinch of salt and pepper to the saute pan. Toss in the pan over medium heat for 1-2 minutes. Add the Marsala wine and reduce by half. Add the chicken stock and return to a high flame. Add the chicken breasts to the sauce and reduce by half.
