Spicy-Sweet Pork Stir Fry with Apples

Ingredients for Sauce

2 tbsp balsamic vinegar
2 tbsp extra virgin olive oil
1 tbsp Agave or honey
½ tsp ground ginger
½ tsp red pepper flakes
4 tbsp lite soy sauce or 2 tbsp soy sauce plus 2 tbsp of water
Sesame oil to taste
1 tbsp cornstarch

Directions

Whisk together all ingredients using the flour to thicken sauce. Set aside and make stir fry. Add spicy sweet sauce to stir fry and continue cooking until desired doneness.

Ingredients for Stir Fry
1 pound of boneless pork loin, sliced into strips
1 bunch of bok choy, cut into bite-sized pieces
2 apples, cut into matchsticks
1 bag of broccoli slaw
2 shallots
2 cloves of garlic, minced
1 tablespoon canola oil
1 tablespoon sesame oil

Heat both types of oil over medium-high heat. Cook pork until browned and cooked through. Remove pork from the pan, add garlic and shallots. Saute for a few minutes, until shallots are soft and garlic is golden. Add bok choy, apples, and broccoli slaw along with sauce and sauté roughly 5 minutes, or until almost cooked. Add the pork back to the pan and mix with sauce and vegetables until heated through.
Serve hot, along or over brown rice.

Apple Tortilla Turnover
Ingredients
1 apple
1 tablespoon butter
1 teaspoon cinnamon
2 multigrain tortillas

Directions
Melt butter in a large saucepan. Add apple, sugar and cinnamon. Saute apple until soft, then remove and set aside. In the same pan, add one tortilla and brown both sides in the remaining butter, sugar, and cinnamon. Add apples to one half of the tortilla and fold the other side over the apples. Repeat with remaining tortillas until apple mixture is used up. Serve warm.

Nutty Apple-Cheddar Salad
Ingredients:
• ¼ cup plain yogurt
• 1 tablespoon apple cider vinegar
• 1 teaspoon finely grated peeled fresh ginger
• 1 apple
• 2 ounces Cabot Sharp Light Cheddar, coarsely grated (about ½ cup)
• 2 ribs celery, chopped
• 2 ounces walnuts, coarsely chopped
• 2 tablespoons golden raisins
• 4 butter lettuce leaves
Directions:
In a medium bowl, whisk together yogurt, vinegar and ginger.
Cut apple into quarters and cut away cores. Cut quarters into thin slices, then stack several slices and cut into matchsticks.
Add the apple and remaining ingredients to the bowl and toss gently to combine.
Serve in lettuce cup. Enjoy!
