Biaggi’s Grilled Shrimp Cobb Salad

6 pc large shrimp
¼ cup hot sauce
½ lettuce, heart of romaine
¼ cup hearts of palm, sliced
1 hard-boiled egg, cut into quarters
2 Tbl pine nuts, toasted
2 Tbl corn kernels
4 cherry tomatoes, cut in half
¼ avocado, chopped
2 strips bacon, cooked and diced
¼ cup creamy Parmesan dressing
Cracked black pepper

Place shrimp on a skewer and marinate in hot sauce for 12-24 hours. Grill marinated shrimp for 3-4 minutes per side. Drizzle 2 tablespoons of dressing along bottom of large platter. Cut the ½ of a heart of romaine in half and place on platter over dressing. Evenly distribute the hearts of palm, pine nuts, corn, tomatoes, avocado and bacon around the platter. Place the hard-boiled egg pieces at each of the corners of the platter. Drizzle the remaining dressing over the entire salad. Remove the grilled shrimp from the skewer and place over the center. Garnish with cracked black pepper.
