Restaurants, retail on track to open

PEORIA, Ill -- New businesses are popping up here in central Illinois.

At Westlake Shopping Center in Peoria, a Ross Dress for Less clothing store is on track to open by mid-summer.

By fall, the Panera Bread restaurant will move from its current Westlake location to the former Ruby Tuesday's building, with the addition of a drive-thru.

The Cohen Development president says the company is in talks to add another national retailer, which should complete the shopping center's progress within a year.

"We're able to, through development, improve the customer experience, attract the better retailers, and together, it's been synergistic with what's become really the rising tide which lifts all boats," said President of Cohen Development Company, Les Cohen. The shopping center overall is performing better. The customer experience, which has been the whole basis of this redevelopment is improving, and we're going to continue to do just that."

A Ross store will also open soon in East Peoria's downtown Levee District.

Other upcoming restaurants include Potbelly Sandwich Shop and Red Robin Gourmet Burgers, expected to open by fall.
