A sandwich shop in Peoria cooks all its items fresh to order.
"The Mix" has a kitchen which really bustles when its busy.

The Mix is a take-off on a classic Chicago style sandwich shop. Lots of fire and smoke back in the kitchen. Take it as one sign each order is cooked to order. -Not prepared ahead of time.
Zach Zahouani is the owner and operator. Zach is here seven days a week and appears capable of rattling off the menu in his sleep.
"We have Philly Cheese Steak Sandwich. Italian beef. Burgers. Gyros. And salads," said Zahouani. "We have Gyro salads. We have grilled chicken salad. We have "The Mix." It is like a combination with a grilled chicken and the gyro meat," he said.
"It was healthier. Not as greasy," said customer Shawna Sams. "The fries were nice and seasoned. Hot and fresh," she said.
"The burgers taste more like they are actually off a grill and not stuck in a fryer," said customer Corrie Shaner. "And the place is actually cleaner than most other places I think," he said.
The burgers are extra tasty and less greasy because their char broiled. That helps explain all the pyrotechnics in the back.
Photographer Larry Faulk ordered the Philly Steak Sandwich. He had it with cheese and onion but held off the sport peppers. Larry "scarfed" the Philly down without comment, a sure sign it was good. I had the Italian beef. This is a top seller. I had it with peppers and dipping juice on the side. This a real taste of the Windy City.
Another customer, who was a native of Chicago, said the here sausage was the only item that was sub par. I'll take him at his word and stick with the Italian beef. Our bill together with drinks; $16.07.
You can carry out or eat on the premises. There is a little wait with each order. Call ahead for carry out.
The Mix is on North Knoxville. They are open seven days a week from 10am-10pm.
